Before winemakers bothered disgorging sediment from bottle fermented sparkling wines, northern Italy had its own version, and it can still be found in the villages today. Lightly sparkling, crisp, dry but with a gentle creaminess from the yeast sediment, the wine is cloudy when poured and very moreish. Served well chilled, this is perfect for drinking in a tumbler with a few prawns or oysters in the backyard. Sulphite free to boot! (other that whatever is naturally produced by the fermentation).
